Fall has arrived!!

Here in East Tn, the air is crisp, the sunlight is amazing!! Today was a beautiful God blessed day. It's the end of Boo's fall break. We went to church this morning and then onto Knoxville for a little window shopping. 
  Once we got home, I sauté d an onion, carrots and garlic. To which I added sausage to cook a little bit. I then added chicken stock, 8c water and 2lbs Lentils. I added paparika & red crushed pepper.  It has turned out rather tastie!

I have been searching for the perfect fall tablecloth to no avail. So I shopped my cloth stash and found a suitable piece that is fallish. It took me about an hr to sew the edges. It makes me happy.

Happy Labor Day Weekend!

 So I am seeing the signs of Summer's end, and it makes me sad. I love Summer, it is my favorite time of year. The humidity is the only thing that I dislike about it.
 This weekend was so busy. Labor day weekend is the Cornerstone of Recovery Alumni. We spent Saturday afternoon hanging out there. It was extremely hot and humid standing around the parking lot.We missed the BBQ, got there too late to enjoy the food. Oh well. Afterwards, I talked Hubs into to taking us to my favorite restaurant; Carrabba's. I seem to always have the Mezzaluna, my favorite dish!

 Sunday, Jimmy was in charge of the Motorcycle ride fundraiser for COR. We had a good participation of people. Fourteen motorcycles in all. We rode to the Apple Valley restaurant in Townsend, and then  throughout the Foothills Parkway. Last stop was at Foothills Harley Davidson, before heading back to COR. Some folks peeled off and headed on home.

Once we got home, we watched an episode of Dexter, then spent 30 mins on the treadmill, plus P90X Leg workout. Now my quads are burning.
The day did not end there. Jimmy and I took our 13 yr old to Boomsday. Knoxville was packed with people on Neyland drive. The fireworks were spectacular. So it was a super late day and I am still exhausted from it.

Up to Date News!

So it's the middle of August, and I haven't been posting regularly, I kind of have muddled brain at the moment. My big project right now is stripping down a butler table that my mom gave me. It is a Bombay table, that she purchased in Texas when I was a girl. She started sanding it and stopped. So I am going to finish it and paint it a Shabby Chic White. I have the perfect spot for it. Sitting beside the front door, over the registrar, with a pretty lamp and mirror hanging over it. I just have to find the pretty lamp and mirror.


I have been reading the book of Proverbs. I am doing a daily challenge. It has 31 chapters, so a chapter a day. The verses that speak to me, I mediate over.

Boo is enjoying her eighth grade experience. I can not believe that she only has four more years of school left and then up and out as a grown up! I am very proud of her. She is growing into a very loving, smart and beautiful young lady.

Jimmy has a project going as well. His dad gave him a1999 Mercury car. So far, he is going through this car with a fine tooth comb, so he can use it as a daily driver. The engine light keeps coming on, at present, so he is trying a few suggestions from the mechanics before he has them "smoke" the gas line. (I have no idea, it's what they said) It amazes me how much can go wrong with vehicles. I just want to get in, turn it on and go!!

Living Room Ideas

  A similar view of my mind's eye.  It all revolves around the Cindy Crawford couch from Room's to Go. I love the denim couch. I love the zigzag carpet. Even though the chair is striped....not sure if the chair and rug would go or not....Still I am trying to put my "inspiration" together, to see what works and what doesn't.  To go with this collection, I have a butler's tray table that Mom gave me some time back. She had started sanding it down and I will have to finish it. Thinking, maybe painting it a shabby chic/ beachy coastal white.  Mom also, gave me two end tables that are log legs and rustic plank top that I will be using.  So now, to find, curtians, mirror, artwork, and lamps. Oh and a "built-in" desk for two on the other side of the room......

(I went through Polyvore, to collage my thoughts. It's the only one that I thought of that might work, so we will see.)

So, it's been a month since my last posting. It's not because I haven't had a lot of ideas.  Alot has happened within the last few weeks or so. Well, actually since school ended in May. My mind is actually a chaotic whirlwind....partial problem, I don't have the computer skills to post certain ideas. Like, how do you make collage photos for posting?? I have tons of decorating ideas for my home and would love to "blog" my thoughts to get the ideas straight. I have such a varied  appreciation for different styles, that I need to rein my ideas in. Especially since I would love cohesiveness and beauty throughout my home.

Taco Wraps!!

I have concocted my own version of Taco wraps. My family really digs it, so I thought I would share.

1 lb ground Turkey
1/2 c Old El Paso taco mix
1 can black beans, drained and rinsed
1/2 cup frozen corn

And for the wrap: Ole` Mexican Foods: Xtreme Wellness High fiber, low carb  Tortilla wrap (It has NO Cholesterol, Hydrogenated oil.) It does have: 9 g fiber, 5 g Net carbs, 5 g protein and Omega 3 from Olive Oil!!

So I browned the turkey, added the beans, corn and seasoning.

Added mexican cheese, 1 tablespoon Thousand Island dressing, spinach leaves. Then wrapped them up!
Yums! Sorry no pics...but these are really really good.

MELANCHOLIC

Normally, I love SUMMER!  I have been experiencing a very chaotic life, at the moment. Therefore, my mood has been a little bit melancholic. Thus, I have not posted since the end of May...

To recap some events....The girls are now out of school for the summer. Cheyenne has went to her dad's for now. Maybe a permanent thing. THIS DOES NOT MAKE  ME HAPPY. However, what do you do with the rebellious child?? 
Minnie has decided to stay home for the summer. I am enjoying my time with her. I was able to celebrate her 13th birthday with her this year. Yay.

I have turned another year older on June 4th!. My Bestie, gave me a cookie cake and flowers for my birthday. My Hubs, Minnie and I,  went to eat at my favorite restaurant, Carrabba's,  after I got off of work at 3pm. And another cookie cake. I am truly blessed.  I have to remember, I am not in charge, God is... It's hard to let go sometimes and let him take over.

June 9, 2013: We spent the day at Cades Cove in Townsend, Tn with my parents and sister's family. We had a picnic and hung out for awhile before finishing the loop. I enjoyed the time with my Mom, Dad and the family.  

Jimmy and I have restarted P90X. I am so very sore. Now if we could get the nutrition together to go with it, the results will be spectacular!

April in Review










So this April, we spent some time rejuvenating the front yard. Still quite abit of work needs to be done. One flower bed, will soon become my veg/flower garden. It is all up to the buying and planting now.
After 7 years, I finally got around to picking out some toss pillows for the couch. Leather can be so cold and it really needed to be softened up. I need to find one or two more with texture, to lighten it up. Need to plan for a few other touches.

For awhile now, I have wanted some moccasins. So I broke down and purchased a pair. Due to all the rain this month, I have not been able to wear them though! So sad. They are so pretty. Makes me happy.
Alas, April showers bring May flowers, so it tis for a season.

The Last Sunday of April



Happy Happy Sunday! Today in East Tennessee has been one rainy day. Hubs and I have tried to keep each others spirits up. This type of weather makes me so melancholy. Luckily, we had the day together. Did a quick couple of miles on the treadmill, then vegged for the rest of the day.
No movies, or going any where. Just a day of much needed rest.

I am so very blessed by God above. I seem to have trouble remembering it daily, hourly or even by the minute.

I am so EXHAUSTED

So to tell you guys the whirlwind of my week, man, I am exhausted. So much has happened since my last post. The week has been a blur. Jimmy and I ran Knoxville's Covenant Health half marathon on Sunday, April 7. We had respectable times; Jimmy ran it in 2hr:6min:14secs, and my time was 2hr:14min:25sec. We'll take it. About the 10th mile, I developed a blister on my right foot. So yeah, I blame my slower time on the blister, and I have a hard time keeping momentum up hills. Jimmy has been babying his right hip after injuring it about 4 wks prior.
 Monday, was a rest day, for sure. We got up late and chilled, then took a long nap in the afternoon. It sure was a pretty day though. Clear, crisp, warm, blue sky, and we missed it. : (
Tuesday morning, I went to work. All was good in my world until.... I got a phone call after 2:00pm. Ashley's grandfather called me. Told me she had been in a bad wreck. They did not know how bad she was, but she had been ejected. Ok, stomach hit the floor, mind started coming up with the worst case scenarios!! Then my mom called right after with the same news. Needless to say, I freaked out a little. I called Jimmy, left work at 3:00pm and he meet me at home. I called the local hospital- she wasn't there. I called her grandpa back, she had been transported to Asheville Mission St. Joeseph ER. So they bypassed two capable local hospitals to go to Mission. Ok, more freaking out. Off to NC, we went.
So we get there around 5:30 or so. It was such relief to see her. No, she had not been ejected, though apparently rolled her vehicle. Which is bad enough. She was wearing a seat belt, thankfully.
So with God's divine hand on that child, she came out with nary a scratch or broken bone! Just a severe case of whiplash. She was discharged. I gave my child a huge hug. Jimmy and I headed back home. We got home super late. 
So I got my shift covered for Tuesday(actually Michele got it covered for me). Jimmy and I slept in. Then we went to Jimmy's doctors appt about his hip.
Thursday, Jimmy went to work, and I went to the Forums at work. Meet up with my friend Melinda and we ran a quick 5 miler. My TNCC class has been rescheduled as well.
Friday, I slummed. Read the entire book, Friendship Bread. A very heartwarming story. Then fixed a pot of Chili'. One of my favorite meals!! I was waiting on my Mom and Dad, nieces and nephew to come over from NC.  They arrived LATE! We slept late, then we all went to Market Square. It did not fare well with my Dad. He just couldn't walk it. So we came home and hung around. They left around 6:00pm.
I was craving fried rice, so Jimmy and I went to get chinese takeout. So we rented Life of Pi and ate Chinese before going to bed. Chey was babysitting, while Minnie hung out with her friend across the road. On into Sunday,  we slept in again. Ashley called around 10:00 am, on her way over. We hung out at home and did a little yard work,  while visiting with her.  She had gotten a new car on friday! Sweet. It is a Ford Fusion, 2012 model. It handles well. So she spent the day with us, before heading back to NC.

Time for Friendship

    When I was a much younger, like 20 years ago, a friend, Kayla A. in Erwin, Tn gave me a recipe this recipe. It makes a very moist cake, the catch......It takes thirty days!!


  •       Friendship Cake
  • You will need 1 1/2 cup Starter. 
  • 1st day: In a gallon jar; place 1 1/2 cup white sugar and 1 (29 oz) can sliced peaches with their  juice. 
  • Stir once every day with a WOODEN SPOON. Keep the lid on loosely. 
  • 10th day: Add and stir 2 cups white sugar and 1 can (15oz) chunk pinapple with juice.
  • 20th day: Add and stir 2 cups white sugar and 2 (10oz) Marichino Cherries with juice.
  • 30th day: Drain liquid from the fruit mixture. Divide into 1 1/2 cup batches. Divide fruit into three batches. The liquid is the starter. Put each batch into clean, tightly covered jars and give to friends with a copy of this recipe. 
  1.  The starter must be USED within 5 days. 
  2.  Do Not USE Metal Containers, Bake cakes on the 30th or 31st day. You will have enough for 3 cakes, so triple the ingredients when you make the cakes. 
  3. The recipe below will make 1 bundt pan or 2 loaf pan cakes.
    1. You will need 1 box Duncin Hines Butter cake mix 
    2. 2/3 cup canola oil 
    3. 4 eggs
    4. 1 box (3oz) Instant Vanilla pudding mix
    5. 11/2   batch of chopped fruit mix
    6. 1 cup chopped pecans
    7. 1 cup shredded coconut (if desired)   
    1. Mix all ingredient together with a wooden spoon in a large mixing bowl. DO NOT USE AN ELECTRIC MIXER! Pour into a greased pan. Bake at 300* for 55-70 minutes.

Easter Sunday, Thank YOU God, for your Son. Dear Lord, I am your daughter. Thank You! Jimmy and I just had a day of rest together, slept in, watched Game of Thrones marathon, then Jimmy ran 8 miles while I rode the bike beside him to cheer him on.

Today, I meet up with a friend of mine, and we ran 5 miles. I have just a week before the race. Whoo hoo!! Here comes a half marathon time..this time I am better trained. I can do this, God gives me strength. During a run, when I feel like I can't run another step, God shows me a bluebird, then my spirit is renewed.
I am catching up on my History Channels series now, The Bible, and when I finish this I will catch up with The Vikings!! Tonight is the start of Baseball...Whohoo!! Time for the boys of summer. 

Update on the Doglets: So it took about 5 days or so, before Buddy came around. Now they play and lay together, eat from the same dish. They are pure entertainment. Still struggling with potty training the puplet. He is took out very often, but still accidents accrue. I don't know how to do it any other way. If anyone has any suggestions, please do share.

Peaks and Valleys

 So my perpetual life has been in motion with different peaks and valleys. I worked last thurs-sun this past weekend. Saturday,though, I had the BIGGEST scare of my life. Around noon, I sat down for lunch with a Lean Cuisine Turkey dinner. I got choked. I mean, honest to goodness, choked by a piece of meat. I could not cough it up. I could not swallow it. I could barely breathe. No one was in the breakroom. So I walked down the hall toward the nurses station. It took a few seconds, Dr. P figured out what was going on. I had the Heimlich maneuver preformed, which did not remove it. However, it did move so that I could breathe a little better. An IV was placed and they gave me a medicine called versed. It knocked me out and the meat was removed. That was the end of my work day and one of the scariest things to happen to me, EVER. On Sunday, I received a ton of ribbing and disbelief that I was even at work.
  Hubs and I slept in on Monday. It is a grand feeling. I was wore out, after my weekend. Jimmy is nursing a R hip injury from running. Then my eldest child called at 0800. And then arrived 2 hours later. So it was then time for food, and we headed to IHOP. Love their Swedish crepes. I know, so bad. It was a terribly cold day in East Tennessee. Snow flurries all day long, without any accumulation.
  Tuesday was NOT any warmer. Ash slept in, while Jimmy and I traveled to Wal-mart for grocerys and oil for 3 vehicles. Jimmy changed the oil in all of our vehicles and Ash's too. After all that hard work, I sent him for a massage. While he was there, Ash and I window shopped at Barnes and Nobles, Trader Joe and Toys "R" Us. Finished off our evening at Five Guys and Fries, before Ash headed back to NC.

  Today, while Jimmy was at work, I tried a Williams Sonoma recipe for English Scones. I slathered them with Strawberry Perserves. Yummy. Not very good cold though. Recipe can be found here:

On the Second Day of Spring

Yesterday being the first day of spring- was cool and breezy. Jimmy and I slept in until 1000. I had been up and down with Darby since 0600. But it felt good to just rest. We chilled until I had to leave for PALS part 2. Once I got home, we curled up on the couch and watched "The Hobbit". LOVE IT!!

We had a good night with the baby. Currently, we are crate and potty training him.Three nights out of five, he slept well.  When he whined with lights out, we placed  Darby's crate downstairs so he could whine at his content. Darby is doing fairly well with the potty training. Just a few accidents. He truly is a handful.

On Tues, I took Chey and her friend shopping at Turkey Creek. She had $$ that she couldn't wait to spend at Aeropostle. She got her aviator glasses and a cute tank top. Then they window shopped.

I walked around by myself, because it's just not cool for a teen to be seen with her mom. I love World Market, but I was able to walk out of there without spending a dime. It was SO hard!!

Today was 25* when I went into work this morning....Ya'll I am so ready for WARMTH! We had a busy day in the ER and I am gonna sign off and hit the bed. Three more days to go.

Kitchen Decor Decisions

 I need to find some fabric, so that I can sew some kitchen curtains. I have been searching and searching for the perfect curtains...to no avail.  Yesterday, I was reading some blogs that I follow and was introduced to Online Fabrics.com from +Cottage and Vine, http://cottageandvine.blogspot.com/. So I browsed through the blue section, looking for an aqua or turquoise coloring in it. These are the samples of fabric that I am attracted to.
 I have a little blue basket that my Grandpa used to collect eggs in from his Rhode Island Reds. I want to incorporate this basket into my decor. My top choice is the multi flowers with the scrolled vines in the background. Oh the choices to make.....

Happy St Patrick's Day!







Happy St. Patrick's Day to all, my Friends!!


 First night with the new puppy was successful. Of course, we did not go to bed until 0100. He was took outside multiple times before retiring to the laundry basket, lined with pee pad, nice soft cushy bed with heating pad under, and tick tock clock on.  He did not wimper until 0730 this morning. He has done his business a couple of times and is full of energy. Buddy is not happy with the new comer.


So baby steps with this new adventure. Today, we are going to my friend Nicole's reveal party...Exciting stuff. New puppy, new baby in the gang...... Life is good, God has blessed us all well.

I've been away from the computer!

Like I said last week, this week has been BUSY!! I did a 10 mile run on monday, after working the 4 previous days. Worked Tues and wens., had skills day yesterday and ran 5 miles with a friend. Then, today, I slept in til 1000. Started working on PALS, which consists of pre course exam, 12 core situations and then a final written exam!! I hate taking tests...I have high test anxiety. I blame it on nursing school! I just finished around 1700..My mind feels frazzled!! Now, to wait until next Wednesday to finish the rest...part 2. Hands on, actually assessing and resuscitating a dummy.

Rejoice, herald in March


So on Wednesday night, I tried the 2nd recipe from Weeknights with Giada. What do you do when you don't have everything?? You substitute. I left off the yogurt sauce, because Hubsie ate the yogurt. He isn't a big fan of salmon patties, but approved of these. I think the capers helped. My picky child Boobug, even ok'd them. Cheybug loves salmon, so she approved!

Wednesday night, I even caught a Pioneer Woman rerun on Food Network. I have only seen bits here and there, but I follow her blog. I love her personality and recipes. 

Tonight is Day light savings time!! Preparing for tomorrow,  day four of another 12hr shift. Today though was steady and busy, but not drown you busy... I even managed to drink 4 bottles of water. Yay. I still have not had any Diet Coke or cola in 20 days!! Booyah, for me. Another 20 and hopefully I will not have any inkling to consume the corroding substance!! 

This week is gonna be BUSY... Monday 10 mile long run, Tues-Wens  work, Thurs...skills day at work, plus I've got to get 12 core studys done for PALS. Which I will be doing the next wensday. Prayer... Lots and Lots of Prayer for me, PLEASE readers.

Another Busy Weekend

Jimmy and I had time off together on Saturday. So we slept in a little, did a little bit of laundry, grocery shopped, then just vegged at home. Boobug took off to hang out with a friend at the movies, then just stayed the night. While we were out, we picked up Pitch Perfect for Cheybug. It was a movie that she seen in one of her classes, and she raved about it. Nice surprise for her. She was tickled pink. Then we watched it with her. Beyond the kids drama, the movie was good. Has a great soundtrack.

Sunday morning, Jimmy did a 20 mile long run. I meet him out at Melton Lake and did 9 miles of my own. He is going to run the Marathon again this year and I am going to run the half. It was a good run for me.  Once we finished, Jimmy craved some fried apples....so he gets on the phone to call his Mom (Geri) and she tells him to slice some apples, butter a frying pain, add brown sugar and a little water.
So with her directions I concoct a recipe of  5 sliced Cameo apples, 2 tablespoons of softened butter, 1/3 c brown sugar and added 1 tsp cinnamon. Apples into a hot cast iron skillet and added 3/4 c water. Fried them down some, then added the brown sugar and cinnamon. I must say they were very Tasty!!

At 8pm, we watched The Bible on the History Channel. This segment ran past where we are in the Old Testament reading. It was portrayed well. However,I do not feel that Sarah was not displayed in the best of light. Hopefully, we will be able to catch it all. The one thing that I am not pleased with is all the blessed commercial interruptions...arrgh!




Moses receives the Ten Commandments.I really should be studying now for my PALS re certification....I am so procrastinating.

Anticipating Spring!!

Wintertime is my least favorite time of year. I do not like being cold. I do not like the barren look. I do not like the gray overcast to everything. Right now I want to hibernate, then I get cabin fever. I am fine once I get going, it's the get up and go, that hangs up. I fight it it very hard during the winter time, but sometimes it feels as if my mind is in a fog that won't lift. But yet my mind is constantly whirling with ideas and thoughts.  Honestly, I remind myself of Goldilocks- I want everything JUST RIGHT! Of course, who doesn't?  I could use some sun, surf and sand therapy right now. Maybe, that is what Jimmy and I should do every February, hit the beach to break up the doldrums of winter.  I am so ready for spring and summer. That is my time!!

Jimmy and I are still reading the chronological bible together. The old testament is really hard to follow. When I was a young woman, much younger in my 20's, I used to pray for Job's patience, never realizing the full extent of his suffering. And I dang sure don't want God to just let satan loose on me. Now I am in the late season of 30 and I pray for Love, wisdom, God's will, guidance and strength.

Currently, I am reading Crazy Love by Francis Chan. I have made it to chapter 6 and am at the point that I need to slow down and reread to let the lesson speak to me.

On a bright note: Jimmy bought me a pair of mint green colored jeans. I am so excited, Hubsie loves me. I got a Tee to wear with it, but I need to go through my closet to put multiple outfits together.
 Monday night, Jimmy took me and the kids to Longhorn Steakhouse. We had an excellent time together and a great meal.  I had lunch today with my best bud, Tammy at Olive Garden in Knoxville. We had a great time.  This weekend I am anticipating my oldest daughter coming home for a visit. Life is good, God has blessed me well.

Life's activities

  So the last six days have been super busy. I have the best Valentine, ever!! Jimmy worked on Valentines day, so I went shopping. I planned out a nice dinner for the four of us to enjoy. My bestest Valentine brought home roses and chocolate!! He also brought chocolate for the girls : ). He loves us!

To accompany our dinner, the girls and I baked cupcakes. They were good, but could have been so much better. (My oven get super hot or something, even with adjusted times the bottoms get too done. Does anyone out there have any suggestions? They would be most appreciated)

Both girls stayed at friend's houses on friday. So we lounged in the alone time after Hubs got home from work. Saturday, we had the day together off. We got my 8 mile long run out of the way, then goofed off in Knoxville for the remainder of the day and evening. We had an evening dinner at Romano's Macaroni grill and Italian restaurant. The service was good, the fare not so much.

Sunday, Jimmy ran an 18 mile long run, while I chilled at home. Around 5, I fixed a large pot of chili. One of my favorite meals ever.
Hubs went back to work on monday, the girls were out of school for President's day. Boo and I went shopping, while Chey hung out with our next door neighbor. I picked up the cutest egg crate. (I had bought one on saturday, while Jimmy and I were out. I had to get another one, for a full dozen eggs, don't ya know.) Found a pair of flats at JC Pennys, because the family is hating on my poor oxfords. I really was on the search for a pair of mint colored jeans, that fits, to no avail. Then we went to Dillard's, to get my face wash and booyah, they were having an Estee Lauder gift with purchase. Yay, freebie for me. Boo was shaking her head, tsk tsk, you don't wear much make up. Yes, I know, but I still can't resist that girly call.  Then on to the grocery store....yikes. Mainly to get a few essentials, and restock a few things; ie Kidney beans. I need a list of the Ultimate Cook's well stock pantry.
Last night, I made an awesome chicken recipe from Weeknights with Giada; Chicken with Tarragon and White Wine. I had to tweak it some, for I did not have Tarragon, nor could I find it yesterday. I used a dry mix of Italian herbs. It was delicious!
